Ever have those days where you want to try something a little different? Me too! Things have been busy for us lately with vacation, working out, taking care of our dogs, and other things going on as to why I haven’t blogged in about 4 weeks! Time flies when life gets so busy. Last week I tried this new glaze for dinner. I had some tuna steaks in the freezer that I thawed out. I had some orange juice, the Simply juice brand, that is the bomb in my book as far as orange juice goes! I love it! I’ve made this glaze 3 times now, twice for tuna and once for chicken. It’s really gooood with both meats. Yes, those are intentional o’s in good….It has a sweet and tanginess to it that draws you in….
1/2 cup balsamic vinegar
1 cup of orange juice with no pulp
1 tsp minced garlic
Salt and pepper to taste
1 tbsp olive oil
Get out your black iron skillet, or your favorite skillet to cook in. Add the olive oil to the pan and turn on medium heat. Add the tuna or chicken and cook until a nice golden brown. Remove from the pan and set aside on a plate. Pour the vinegar into the skillet, then the orange juice…now don’t worry about scraping any tiny tidbits of browned meat that may have stuck to the bottom of the pan, they will come loose and season the glaze. Next add the garlic, salt and pepper, turn on low and let simmer about 10-15 minutes while occasionally stirring as it thickens. When you scrape the spoon across the pan and it slowly fills back up where you scraped your spoon, you know it’s at the right glazing thickness. Remove the pan from the heat. Plate your tuna or chicken. Pour about 2-3 tbsp over the meat and enjoy! I will post two pics, one of the glaze on the tuna with salad and corn. The second will be a pic of the chicken with the glaze and a side of wilted spinach and kale. Enjoy!!
