Welcome to clean cookies! These contain no flour so they are gluten free! I am trying to get back to a cleaner way of eating. My husband wants to do this, too. He is trying to get in shape for training for his first Half Marathon in April. These cookies are going to be a sweet treat for him to take to work. I plan to put two cookies to a snack size bag. Two is plenty. I normally don’t keep cookies in the house but these will do. They don’t make me feel so guilty if I help myself to two! The thing I like about these is that they have a little protein in them, less sugar and fat than regular processed cookies you buy at the store. They are made from as natural ingredients as you can get. I don’t feel like I’m putting junk in my body. I got the recipe at cleaneatingmag.com. Here’s the ingredient list:
1 cup almond butter (I used Maranatha’s no stir almond butter, and used the whole 12 oz jar)
3/4 cup sucanat (this is a form of brown sugar that is not as processed so it retains that molasses flavor, you can find this at a health food store. I bought mine at an Amish store)
1 large egg
1/2 tsp baking soda
1/4 tsp sea salt
3 oz dark chocolate (70% cocoa or better)..I couldn’t find this chocolate so I used Ghirardelli’s 60% cacao bittersweet chocolate chips, used 1/2 cup chips
1/4 tsp vanilla extract (cleaneatingmag did not call for it, I added it)
Preheat oven to 350 degrees. Line a cookie sheet with parchment paper. In a large mixing bowl, blend together the first five ingredients then stir in vanilla and chocolate chips. Spoon by tablespoonfuls onto cookie sheet. I got 24 cookies out of this batch. Cook for 10-15 minutes. Mine were done in 10. Chewy chocolate chips! YUMMY!!



It’s hard to imagine these are clean cookies. They taste so good.
