Are you trying to eat clean? Are you participating in Weight Watcher’s new 360 program? Are you looking for a new side dish recipe? I have two words for you….CORN SALAD! “Where can I get a recipe for corn salad…” you ask yourself? Right here at thewhitedish! This is a dish my husband and our friends liked. This will definitely be a summer side dish or dip. We enjoyed it as a dip with tortilla chips as well as a side to steak and potatoes. This would also be good as a boat food! Hmmmm, maybe I need to create a recipe category just for boat foods??? Here’s how to make it:
5 fresh ears of corn, cooked and kernels cut off
5 mini sweet peppers
1 medium sweet onion, finely chopped
1 celery stalk, chopped
1-1/2 cups frozen shelled edamame thawed
10 grape tomatoes, chopped or sliced in half
1/2 tsp ground cumin
1/2 tsp salt
1/2 tsp pepper
Juice of half Meyer lemon (optional)
Yogurt dressing:
1 tbsp plain nonfat Greek yogurt
1 tbsp Apple cider vinegar
2 tsp unrefined sugar or Splenda (clean eating magazine uses Domino’s light stevia and sugar blend to sweeten dishes, I think it would work well too)
In a large mixing bowl, add all veggies, lemon juice, and seasonings. Mix well and season to taste if needed. In a small bowl, mix the yogurt, vinegar and sugar. Pour into the corn mix and chill. ENJOY!
