Reflections of 2012 with New Beginnings in 2013


Let’s take a few moments and reflect on 2012 for thewhitedish. It was a great year with lots of accomplishments that will bring renewed optimism and goals for 2013. The first reflection is looking back at the top 10 recipes that were the top most viewed of 2012 and hopefully worked well for cooks out there.  Let’s take a look back:

1.  My healthier version of the Pioneer woman’s campfire banana boats.

2.  Healthy chocolate peanut butter brownies.

3.  The Crock Pot French Dip….a great recipe to keep the ingredients on hand for.

4.  Protein balls…a good snack before a work out.

5.  Chicken Rotel…a family favorite of ours.

6.  Crock Pot Ribs….I was surprised on this one!  I like crock pot ribs, too, just didn’t know how many others did!

7.  Apple Crisp using granny smith apples.

8.  Chicken salad with Greek yogurt instead of mayo.

9.  Peanut butter fruit dip…..yummy!!!

10.  Baked Rotini pasta…also good made with penne pasta

The next thing I’d like to reflect on is the peanut butter fruit dip recipe I listed as #9 above.  It’s a great summer or winter fruit dip.  It’s delicious as a snack, appetizer or even as part of your breakfast.  The thing I most love about this one is that it got published in a Health newsletter for a clinic earlier this year.  Thank you Ms. Betsy!  Check it out here.

Thirdly, I really focused on my exercising this year and got in better shape.  I took on running as full force as I could training for my first Half Marathon.  I accomplished it!!  My husband also got more into running this year and will be training for his first Half Marathon coming up in April.  Wish him luck and wish me luck while motivating him through his training!  We have to use any motivation we can get!

This year in 2013, I want to get more experimental in my cooking, especially since I’ll be eating LOTS MORE CLEAN!  That is one new beginning…concentrate on more organic whole foods than processed and cutting out the bad stuff.  By the way, while we’re talking about being experimental…I am in a contest where I have to take a turn in making a roasted chicken recipe….my turn comes up January 2nd and I must have it submitted by January 9th for a chance to be in a cook book…wish me luck!

I’d like to make a new beginning with my work outs…do more, change them up a bit.  Add more runs in when I can (obviously for marathon training).  Maybe I can get more ladies involved with me on this, we will see what the year holds.

There are lots of other things I’d like to do like landscape my front yard, take my black Lab walking more around the neighborhood, talk to family more…..there’s a whole list of things that I can’t even cover!  Ha!

Lastly, this past year, I worked on being a better person, thinking of others, being more positive, going back to church and being there for my friends and family.  Life gets busy and sometimes we take things for granted.  Don’t let life get so busy that you forget what is most important to you.  Let’s make 2013 a great year and count our blessings!
