In a word…..YUMMY!
I have to say that these brownies contain chocolate protein powder, hence, the word ‘healthy’ in the recipe title. I couldn’t help it, it’s another pinterest inspiration. I was looking for something different than our regular protein bars we’d been eating for snacks. You know how you do, you get tired of the same old foods sometimes? This makes a great snack, on the go breakfast bar, dessert…whatever you want to call it! I’m going to make another batch this weekend!
1/2 cup chocolate whey protein powder (I used Advocare’s chocolate meal replacement shake powder)
1/2 cup plain oatmeal (not instant, I used old fashioned oats)
1/2 cup organic lowfat milk
2 egg whites
1/2 tbsp vanilla extract
1/2 cup splenda (I used splenda this time, but I want to try sucanat or honey in the next batch)
1/4 cup ground flaxseed
2 tbsp whole wheat flour
1 tbsp unsweetened cocoa powder (I used Hershey’s all natural cocoa)
3/4 tsp baking powder
1/2 tsp salt
6 tbsp all natural peanut butter
Preheat oven to 350 degrees. In small bowl, mix milk and oatmeal, microwave for 1 minute, stir and set aside to cool. Once cool, add the egg whites and vanilla and stir. In large bowl, mix all the dry ingredients, flour, splenda, flaxseed, cocoa powder, baking soda, salt and protein powder. Add the oatmeal mix to the dry ingredients aish,nd stir just until all moistened.
Take and 8×8 dish, spray with cooking oil
Spread batter into dish. Dollop the 6 tbsp of peanut butter on top of batter, then take a knife and swirl. Cook for 10 minutes, take out and let cool. You can cut it up into 6 bars or 12 small brownies. ENJOY!

Looks delicious!
Thank you! They are good, my husband ate them up!
I am so sad your honey did not leave any samples for me! All your stuff is always so good!
I know! These disappeared in a hurry! I will make more and bring you some. Thank you for being a willing volunteer tastetester! LOL
Sounds Delicious! I use vanilla soy milk all the time. Do you think they will bake ok using it? I just have to try this.
Jan
Hey Jan! I think the vanilla soy milk would be fine, even almond milk. Let me know if you try it and how it works!
I gotta’ say, I read the ingredients list and was going to ask you what you were using them for, because they couldn’t be good to eat
Then I saw the pictures!!!!!!
Hope to see an update if you try a natural sweetener. I just haven’t developed a taste for any artificial sweetener.
Keep on blogging – I love it!
Thanks Julie! Yes, the ingredients may be a little odd, especially the flax seed! I want to try the sucanat sweetener, don’t have much experience with it though. I will definitely give an update on it.
